"At first, Lebanese emigrant Gladys Naufal shared her authentic home-style Middle Eastern dishes with family and friends. Then she expanded her cooking into a catering business known as Chez Gladys. The positive response from her satisfied customers inspired her to take another step and approach local grocery giant Whole Foods Market with a line of ready-to-eat prepared foods. Whole Foods recently picked up several Chez Gladys products, and they've sold so well that the culinary entrepreneur is currently hard at work developing more products: wraps, turnovers, and paella in the ready-to-eat line, as well as a line of Middle Eastern dishes for the freezer case. I've had the opportunity to sample many of these dishes and found them to be tasty, healthy, and satisfying. I made a splendid meal of her rice and lentil dish paired with a hearty vegetable moussaka; a side of bright, lemony tabouleh; and slices of tender local pitas slathered with a luxurious European-style hummus spiked with tangy pieces of artichoke heart. Another evening, I plated the Chicken and Sausage Paella and heated a couple of flaky, tri-cornered Fatayeer (spinach pies). My favorite among the wrap sandwiches has to be the delicious Chicken Taouk: chunks of marinated all-natural chicken breast, shredded cabbage, and tomato slices wrapped in a pita spread lightly with mayo and an assertive garlic paste. For a delightful, healthy bite of sweetness at the end of the meal, Gladys makes Boulboul (birds nests), delicate shredded phyllo dough baked until golden and filled with pistachios and fine dark chocolate. Look for Chez Gladys prepared foods in the reach-in case near the front of both local Whole Foods stores, and go early in the day for the best selections. "
